2025 Sashiko Adelaide Hills Sauvignon Blanc

Average winter rain provided good soil moisture. Cool, dry and overcast conditions caused delayed and slow budburst. After a cooler period from Oct and Nov the rest of the growing season brought ideal conditions resulting in extremely high-quality fruit. After picking in the cool of the night the grapes were then destemmed, chilled and gently pressed into stainless steel vessels. The juice was settled and racked for a long cool fermentation. Once stabilized it was filtered to retain brightness and freshness of flavour.

TASTING NOTES

Pale straw in colour, this Sauvignon Blanc has lifted notes of subtle tropical fruit and fresh citrus, lemon curd with hints of herbaceousness. Tropical fruits continue to the palate with a highlight of passionfruit and lime pith leading to mouth-watering acidity. A bright and refreshing wine which has a smooth and cool crisp finish.
