2025 Sashiko Adelaide Hills Pinot Gris

Average winter rain provided good soil moisture. Cool, dry and overcast conditions caused delayed and slow budburst. After a cooler period from Oct and Nov the rest of the growing season brought ideal conditions resulting in extremely high-quality fruit. After picking in the cool of the night the grapes were then destemmed, chilled and gently pressed into stainless steel vessels. The juice was settled and racked for a long cool fermentation. Once stabilized it was filtered to retain brightness and freshness of flavour.

TASTING NOTES

This wine shows exceptional clarity with a colour of very pale straw. The nose is abundant with pear, nashi pear and a hint of blossom. Pear predominates a palate which also shows green apple, orange blossom and citrus notes. Good acidity balances out a lush and generous mouth feel.
